Mediterranean Lemon Chicken

Ingredients
- 6 ea chicken legs, skinned
- 1/4 C fresh lemon juice
- 1/2 ea lemon rind
- 2 t dried oregano
- 3 cl garlic, minced
- 1 T olive oil
Instructions
- Mix together the lemon peel, juice, oregano, garlic and oil, and season to taste.
- Arrange the chicken bone-side up on a baking dish, baste with the lemon mixture, cover, and roast at 425 for 20 minutes. Turn and baste the chicken, then roast uncovered at 400, basting every 10 minutes, until done.
- Plate and serve with the pan juices.
